Chilled Broad Bean and Pea Soup

Method

  • 1. Saute the onion on the margarine in a saucepan. Pour in the stock and bring it to the boil.

  • 2. Put in the beans, peas and mint sprigs. Cover and simmer for 20 minutes.

  • 4. Remove the mint than blend the rest until smoothed and purred.

  • 5. Mix the yogurt with the curry paste. Add these to the soup and then blend again.

  • 6. Cool it before serving.
  • Ingredients

    • 1 kg  broad beans
    • 480g peas
    • 30 margarine
    • 1 onion. finely chopped
    • 1l vegetable stock
    • 2 sprigs mint
    • 200g natural yogurt
    • ΒΌ tsp. curry paste
    • 2 tbsp. chopped fresh mint
