Method

  • 1. Put the lamb on a chopping board and cut into cubes.

  • 2. Put the olive oil, 3 tsp. of lemon juice, oregano, salt and pepper into a bowl and mix it.

  • 3. Put meat in the bowl. Leave to soak for 1 hour.

  • 4. Wash and dry the lettuce. Slice cucumber and tomato into squares.

  • 5. Put six cubes of meat onto skewers. Add a bit of rosemary.

  • 6. Heat the grill for 10-12 min. Keep turning over until it is brown.

  • 7. Turn the heat down and put pitta bread under each one.

  • 8. Fill each with salad and kebab. Sprinkle with lemon juice.

    • 1½ lb lamb
    • 4 tbsp. olive oil

    • large pinch salt and pepper
    • 8 lettuce leaves
    • 4 tomatoes
    • ½ cucumber
    • ½ tsp. rosemary. dried or fresh
    • 8 pitta breads
    • 8 metal or wooden skewers
