Method
1. Put the lamb on a chopping board and cut into cubes.
2. Put the olive oil, 3 tsp. of lemon juice, oregano, salt and pepper into a bowl and mix it.
3. Put meat in the bowl. Leave to soak for 1 hour.
4. Wash and dry the lettuce. Slice cucumber and tomato into squares.
5. Put six cubes of meat onto skewers. Add a bit of rosemary.
6. Heat the grill for 10-12 min. Keep turning over until it is brown.
7. Turn the heat down and put pitta bread under each one.
8. Fill each with salad and kebab. Sprinkle with lemon juice.

- 1½ lb lamb
- 4 tbsp. olive oil
- 4 tsp. lemon juice
- ½ tsp. oregano. dried or fresh chopped
- large pinch salt and pepper
- 8 lettuce leaves
- 4 tomatoes
- ½ cucumber
- ½ tsp. rosemary. dried or fresh
- 8 pitta breads
- 8 metal or wooden skewers
