Method

  • 1. Get the seeds out from the pod by cutting it half.

  • 2. Boil the single cream with the seeds, than leave for 10 mins.

  • 3. Pour the mixture on to the egg yolks, whisk well to blend then return to the pan.

  • 4. Whisk over low heat until the mixture thickens. Add the vanilla sugar and leave to cool.

  • 5. Whisk the double cream than, fold in the vanilla mixture, mixing thoroughly.

  • 6. Pour into a shallow freezer-proof container, cover the surface with cling film and freeze.

    • 1 vanilla pod
    • 350 ml  single cream
    • 5  egg yolks. beaten
    • 350 ml double cream
    • 1 tbsp. vanilla sugar
    • to serve chocolate sauce
