2. Season the chicken and arrange them in a large roasting tin.
3. Mix together the butter, garlic, parsley and lemon juice. Spread over the chicken pieces. Place in the oven and bake.
4. Slice the courgettes and boil them for 2-3 minutes. Drain well and, after the chicken has been cooking for 15 minutes, add the courgettes. Pour the melted butter on top. Return to the oven and continue cooking until the chicken is cooked through.
