Beat steak with rolling pin. Season. Melt butter in pan. Fry diced onion. Seal outside of steak. Add chopped mushrooms herbs and garlic to pan. Turn out heat. Stir chopped parsley and sherry together in cooling pan. Leave to cool.
Spread pate on one side of steak. Roll out pastry into oblong shape. Put one piece of steak, pate side up on the pastry, drizzle on the parsley/sherry mushroom mixture over pate. Place the other piece of steak on top of the first and wrap up with the rest of the pastry. Score surface of pastry.
Cook at 190c for 10 minutes and then reduice heat to 170c for 15 minutes
