Fry the sliced onion in a drop of oil in a casserole dish (suitable for transferring to the oven). Add the mince and fry until lightly browned.
Cut the carrots in to 3" chunks and the swede in to slightly smaller chunks. Add to the mince.
Stir in the flour and mix well.
Add enough water to cover the mince and veg (less rather more will be better!). Stir and bring to a simmer.
Put the lid on and transfer to a preheated oven (150C) for about an hour.
Take the casserole out of the oven and add the leek (chopped into 3" chunks).
Put back in the oven for 20-30 minutes.
Season with salt and pepper.
Tips
If the mince needs a little extra thickening before serving, blend a couple of tsps of bisto powder with a little cold water. Mix with a spoonful of the juice from the casserole and then stir into the casserole - this method prevents lumps.
