Egusi Soup and Dodo (plantain)

Method

  • Place pumpkin (egusi seeds*) in a blender and blend for 30 to 40 seconds or until mixture is a powdery paste. Set aside.

  • Wash beef and cut into bite-size cubes. Season with salt. In large pot, heat oil over medium-high heat for 4 to 5 minutes. Add beef and saute for 3 to 5 minutes or until brown but not cooked through.

  • Place tomatoes, onions, and pepper in a blender and blend for about 30 seconds or until smooth. Add tomato mixture to meat, reduce heat to medium-low, and cover. Cook for 40 to 50 minutes or until meat is tender.

  • Add tomato sauce, water, and shrimp and simmer for 10 minutes.

  • Add spinach and ground pumpkin seeds and continue to simmer 10 minutes more.

  • DODO (PLANTAIN)

  • Rinse the plantains in cold water. Peel them, and slice horizontally then vertically into half-moon shapes about 3/4-inch wide. Sprinkle with salt, to taste.

  • Pour oil into the frying pan and heat on medium-high. When oil is hot enough, add the plantains in batches, don't overcrowd.

  • Fry plantains until golden brown. Drain on paper towels. Taste and season again with salt. Repeat with remaining plantains.

  • BOILED RICE

  • Rinse rice until water is clean and place in fresh water in pot. Boil rice until cooked to your requirement.

  • Now food is ready to be served as shown in picture.

    • 18oz tomato sauce
    • 3 tblsp tomato paste
    • 1 ½ cups water
    • 2 lbs fresh shrimp, peeled and deveined
    • 1 lbs fresh spinach, washed and chopped
    • DODO (PLANTAIN)
    • 4 large ripe plantains (yellowish red colored)
    • to tast salt
    • to taste Olive oil (for frying)
    • BOILED RICE
    • 3 cups rice
    • 1 tblsp salt
