Method

  • 1. Set oven to Gas 5, 190°C, fan170°C.

  • 2. Cut up and place the vegetables in a casserole dish. Drizzle the top with the oil and roast until tender.

  • 3. Cut the baguette in half lengthways and tear out about half of the soft bread along the inside.

  • 4. Layer the roasted vegetables inside the baguette and then press the two sides of the bread together to enclose the filling.

  • Ingredients

    • 2 bell pepper
    • 3 courgettes
    • 4 slces butternut squash
    • 1 clove garlic. crushed
    • 1 sprig  rosemary
    • 3 tbsp. rapseed oil
    • 4 baguette
