Method

  • Melt the butter, add the flour and cook gently for 3-4 minutes. Stir in the chicken stock gradually. Bring to the boil stirring to blend smoothly.

  • Add the milk, mushrooms, parsley and lemon juice. Cook for 5 minutes.

  • Blend, stir in the cream and season to taste.

  • For a vegetarian version use vegetable stock instead of chicken stock

    Ingredients

    • 250g Chopped mushrooms
    • 55g Butter or margarine
    • 2 tbsps plain flour
    • 450ml Chicken Stock
    • 5 fl oz milk
    • 2 tbsps finely chopped parsley
    • 1.5 tbsps lemon juice
    • 150ml double cream
    • to taste salt and pepper
