1. roughly chop the aubergines and courgettes, and deseed and chop the peppers. slice the onions and finely chop the garlic. heat the oil in a large saucepan. add the onions and cook over a low heat,stirring occasionally, for 5 miutes, or until softened. add the garlic and cook, stirring friquently, for a further 2 minutes.
2. add the aubergines, courgettes and peppers. increase the heat to medium and cook,stirring occasionally, until the peppers begin to colour. add the bouquet garni, reduce the heat, cover and simmer gently for 40 minutes.
3. stir in the chopped tomatoes and season to taste with salt and pepper. re-cover the saucepan and simmer gently for a further 10 minutes. remove and discard the bouquet garni. serve warm or cold....
