Cheese and Potato Pie

Method

  • 1. Preheat the grill to high.
  • 2. Bring a large pan of salted water to the boil.
  • 3. Cook the potatoes for 5-6 minutes or until just tender.
  • 4. Heat the oil in a sauté pan and fry for 3-4 minutes.
  • 5. Pour the whisked eggs into the pan and cook for a few minutes.
  • 6. Crumble over the chedder and mozzarella cheese.
  • 7. Place under the hot grill and grill until golden.
  • 8. Serve now.

      This not how we make it..

      We also use lightly fried onions and together with the chedder, mix in with the potatoes, add a little butter and milk and cracked pepper.

      Place in a tray, top with mozzerella cheese with sliced tomatoes and placed in over for 20 minutes until top cheese is golden and crisp....Simples :-)
