Cheese and Potato Pie

Ingredients
- 400g new potatoes washed and sliced
- 4tbsp Olive Oil
- 4 eggs lightly beaten
- 210g mature chedder
- small handfull grated mozzarella
Method
- 1. Preheat the grill to high.
2. Bring a large pan of salted water to the boil.
3. Cook the potatoes for 5-6 minutes or until just tender.
4. Heat the oil in a sauté pan and fry for 3-4 minutes.
5. Pour the whisked eggs into the pan and cook for a few minutes.
6. Crumble over the chedder and mozzarella cheese.
7. Place under the hot grill and grill until golden.
8. Serve now.

Hi,
This not how we make it..
We also use lightly fried onions and together with the chedder, mix in with the potatoes, add a little butter and milk and cracked pepper.
Place in a tray, top with mozzerella cheese with sliced tomatoes and placed in over for 20 minutes until top cheese is golden and crisp....Simples :-)by PrimeSiteUK on Wed Sep 23 2009 reply to this comment
