1. preheat the oven to gas mark 4, then grease 3 baking sheets. place the butter and peanut butter in a bowl then beat together. beat in the caster and muscovado sugars, then gradually beat in the egg and vanilla essence.
2. sift the flour, bicarbonate of soda, baking powder and salt into the bowl and stir in the oats. drop spoonfuls of the mixture onto the prepared baking sheets, spaced well apart to allow spreading. flatten slightly with a fork.
3. bake in the preheated oven for 12 minutes, or until lightly browned. leave to cool on the baking sheets for 2 minutes, then transfer to wire racks to cool completely....
