Method

  • Grease and line an 8 inch baking tin.
  • Pre-heat oven to 160 C (fan oven) or Gas 5.
  • Cream fat and sugar.
  • Beat the eggs until light and add to creamed mixture.
  • Mix mashed bananas and lemon juice together and add to the creamed mixture.
  • Sift flour, baking powder and salt together and mix quickly into the banana mixture.
  • Pour into baking tin and level.
  • Bake for approx 40 minutes (check after 35), until brown and firm in the centre.
  • Cool on a wire rack.
  • Once cool, cut into 16 squares. (Can also be baked in cake cases but will only take approx 25 mins to bake. Great for kids' lunchboxes).
  • Ideal for freezing.
  • Ingredients

    • 3 Large Bananas - Mashed
    • 9oz Self Raising Flour - Sieved
    • 3 lvl tsp Baking Powder
    • 1 tsp Lemon Juice
    • 4oz Margarine
    • 7oz Caster Sugar
    • 2 Eggs - medium
    • Pinch Salt
