Naughty Refrigerator Cake

The Basics

Ingredients

  • 4oz butter
  • 2 table spoons golden syrup
  • 8oz digestive biscuits broken into very small peices not cumbs
  • 2oz glace cherries quartered
  • 1oz dried apricots cut into small peices
  • 2oz flaked almonds
  • 7oz good quality plain chocolate

Method

Put the butter, syrup and chocolate into a large bowl, and melt over a simmering pan of water. Once melted, remove the bowl from the heat and allow to cool a little bit.
Add the biscuits,cherries, apricots and almonds and mix thoroughly.
Lightly oil a large loaf tin and line with clingfilm. Spoon the mixture into the tin and press down firmly. Put in a fridge for a few hours to set.
Turn out the cake onto a board and cut into slices.
