Method

  • 1. Preheat the oven to 220 degrees.
  • 2. Whisk egg whites and salt until peaks begin to form.
  • 3. Gradually add 250g of sugar, then cream of tartar and vanilla until stiff peaks.
  • 4. Butter a shallow tin and spead with meringue.
  • 5. Put in the oven and turn it off and leave overnight.
  • 6. Whisk double cream until thick and spread over meringue.
  • 7. Add fruit to the top and cut into slices.
  • Ingredients

    • 6 egg whites
    • ½ tbs salt
    • 250g caster sugar (or more to taste)
    • ½ tsp Cream of tartar
    • 1 tsp Vanilla Extract
    •  butter for greasing
    • 250 ml double cream
    • 4 passion fruit. halved and seeds scooped out
    • 175g blackberries
    • 175g Strawberries
