Stuffed Chicken Breast

Method

  • 1. preheat oven to 190 degrees celsius (410 F, Gas 5)

  • 2. Take each Chicken breast and create a pocket down the side of it.

  • 3. in a pan, melt the butter and fry the spinach until wilted. stand to cool in a bowl.

  • 4. when the spinach has cooled enough to handle, add the nutmeg and mix. squeeze the liquid out of the spinach.

  • 5. in the pocket in the chicken, put a quater of the feta cheeese and a quarter of the spinach. wrap the chicken in bacon covering the pocket.

  • 6. place in a preheated, lightly oiled roasting tin. season with salt and pepper and thyme.

  • 7. cook in the oven for around 30 mins or until the chicken is cooked.

  • 8.serve with roast potatoes, veg and the juices from the roasting tin

    • 4 chicken breasts
    • 70g feta cheese cubed
    • 1 bag Spinach leaves
    • 4-8 slices Bacon (optional)
    • pinch nutmeg powder
    • 25g Butter
    •  salt and freshly ground black pepper
    • pinch thyme

    I remember the first time my 14 yr old son made this as one of his trial dishes. we have it every week now with a different twist each time.
