Method

  • Use a large pot. Sweat onions and leeks in a little butter or oil first, then add all other vegetables and the parsley (stalks and all) on a low heat.
  • After 20 minutes, increase the heat and add the lentils and some boiled water until it nearly covers all the vegetables in the pot.
  • Simmer until everything is cooked and soft.
  • Use a blender to blend ingredients until you have a smooth texture.
  • Taste the soup and season to taste with salt and pepper.
  • Add some chopped parsley before serving. Delicious served with bread and butter.

    • ½ Celeriac
    • 2 Carrots
    • 1 cup Red lentils
    • 1 Potatoe
    • 1 Onion
    • some Parsley
    • optional Leek. green beans or similar
    • some Oil or butter
