Method
Use a large pot. Sweat onions and leeks in a little butter or oil first, then add all other vegetables and the parsley (stalks and all) on a low heat.
After 20 minutes, increase the heat and add the lentils and some boiled water until it nearly covers all the vegetables in the pot.
Simmer until everything is cooked and soft.
Use a blender to blend ingredients until you have a smooth texture.
Taste the soup and season to taste with salt and pepper.
Add some chopped parsley before serving. Delicious served with bread and butter.

- ½ Celeriac
- 2 Carrots
- 1 cup Red lentils
- 1 Potatoe
- 1 Onion
- some Parsley
- optional Leek. green beans or similar
- some Oil or butter
