Method

  • Purchase pre boiled/pre shelled quail eggs from Waitrose or your local farm.
  • With a pestle and mortar combine rosemary, salt, pepper.
  • Grind together until it reaches the consistency of caster sugar.
  • Decant mixture into small ramekins and place quail eggs into small plastic martini glasses.
  • Ingredients

    • 25 Small pre prepped Quail egg
    • 1 oz Sale De fluer / Cornish Sea Salt
    • 1 oz Crushed black pepper
    • 1oz dried rosemary
