Scrummy Fish Pie

Ingredients

  • 300g cod fillets skinned
  • 100g salmon fillets skinned
  • 200g king prawns
  • half pint milk
  • 675g potatoes
  • 50g butter
  • 25g plain flour
  • 1 tablespoon chopped fresh parsley
  • good pinch salt and pepper

Method

Cut fish into chunks, making sure there are no bones. Place into a shallow dish. Pour over the milk and poach at gas mark 5/190
degrees c for 20 mins. Drain and reserve poaching milk.
Boil the potatoes for fifteen mins until soft. Drain and mash with a little milk and half the butter.
To make the sauce, melt the remaining butter, stir in the flour and cook for 1 min.Gradually stir in poaching milk and then bring to boil stirring all the time.
Remove from heat, season well and add the chopped parsley. Add the fish to the sauce and place in the dish. spread over the mash.
Place under a hot grill until crispy and golden brown.
