Method

  • This makes a brightly coloured and tasty meal - red, orange and green.. hence the Traffic Light Risotto..

  • 1. Cut the squash or pumpkin into chunks approx 1cm cubed and discard seeds and skin
  • 2. Fry the onion in butter until transparent then add the red pepper, garlic and squash or pumpkin
  • 3. Add the rice and stir until grains are coated in butter then add the wine (if using) or a cup of stock and stir.
  • 4. Add the fresh herbs and seasoning, simmer until the wine (or stock) has evaporated
  • 5. Add 2 ladlefuls of stock and simmer until the liquid has evaporated again
  • 6. Continue adding 2 ladlefuls of stock and evaporating until the rice is tender but al dente
  • 7. Add a further ladle of stock, the chopped spinach and quartered cherry tomatoes and simmer for a further 2 minutes
  • 8. Garnish with parmesan if desired

    • 750g Butternut Squash peeled and cubed
    • 2 medium onion chopped
    • 2 red pepper. deseeded and chopped into chunks
    • 150g Spinach leaves. chopped
    • 75g butter or margarine
    • to taste salt and pepper
    • 8 cherry tomato. cut into quarters
    • 6 Sage leaves
    • 1 glass White wine
    • 1.2 litres vegetable stock
    • 2 tablespoons Parmesan or Pecorino Cheese. Finely grated
    • 1 garlic cloves. crushed
