- Sprinkle aubergine & courgette with salt and cover with kitchen towel & leave for about an hour.
- Rinse then cut aubergine into 1cm strips.
Frying
- Stir-fry aubergine in oil in batches and drain on kitchen towel. !! Try not to use too much oil !!
- Ditto for courgette, letting them get a little bit brown.
- Stir-fry onions & peppers with garlic in left over oil until golden colour, about 10 mins or so on a medium heat (don't worry if pepper starts to brown a little, this can add to the flavour!)
- Add tomatoes on top of onion mixture in pan, flavour with salt & pepper then cover & simmer for 8/10 mins.
- Uncover and simmer for another 10 mins
- Remove from heat &get ready to use all the ingredients to layer your ratatouille!
- In a casserole dish layer as follows...
1st layer = onion mixture
sprinkle of parsley
2nd layer = aubergine & courgette
sprinkle of salt
3rd layer = onion mixture
sprinkle of parsley
4th layer = aubergine & courgette
sprinkle of salt
Final layer = onion mixture *
- Cover & simmer on a low heat for 35-40 mins.
- No stirring!!
- Uncover and simmer for another 40 mins until all juices are cooked away. **
- Serve hot or cold.
* At this point you can pop it in the fridge for a couple of days & cook up later.
