Lipari Pizza (serves 6) Italian Flavoured!!

Method

  • Set the oven to hot, gas mark 6 or 400'F / 200'C.

  • To make the base-
  • mash the potato. If the potato is hot, stir in the amrgarine, then add the flour & salt. If the potato is cold, rub the margarine into the flour before stirring it into the potato. Knead lightly, then place the dough on an oiled baking sheet & press into a 10 inch round.

  • To make the topping-
  • Heat the oil then gently fry the onions & red peppar for 2 to 3minutes. Spread the ketchup over the potato base. Stir the mushrooms, manjoram, vinegar, salt & peppar into the onion then spread them over the base & arrange the cheese slices over it.

  • Bake the pizza towards the top of the oven for time above until the base is firm & the cheese is rich golden brown.
  • Ingredients

    • BASE: BOILED POTATOES SELF-RAISING FLOUR SALT MARGARINE! TOPPINGS: ONIONS RED PEPPAR CHEDDAR CHEESE COOKING OIL TOMATOE KETCHUP MUSHROOMS MARJORAM VINEGAR SALT & PEPPAR!
    • ½ lb of BOILED POTATOES
    • 4 oz of SELF-RAISING FLOUR
    • ½ a level teaspoon of SALT
    • 2 oz of MARGARINE
    • ½ lb of ONIONS (peeled & sliced)
    • 1 RED PEPPAR (finely sliced)
    • 6 oz of CHEDDAR CHEESE (thinly sliced)
    • 1 tablespoon of COOKING OIL
    • 2 tablespoons of TOMATOE KETCHUP
    • 4 oz MUSHROOMS (sliced)
    • ½ level teaspoon of MARJORAM
    • 2 teaspoons of VINEGAR
    •  SALT & PEPPAR
