Low Fat Coronation Chicken

Method

  • Fry the chopped onion in the cooking spray until soft, then add the chilli. Chop the chicken breasts into bite size peices and add to the pan and add the lemon juice. When the Chicken is cooked put to one side and season with the salt and black pepper, but leave some of the onion in the pan and add another spray of the oil to stop the pan from burning. Add the tomato puree, mango chutney and curry powder until thoroughly mixed together, make sure the heat isn't up too high at this point. Turn off the heat. In a separate bowl pour in the mayo and one of the cartons of natural yogurt. Add the curry mixture and stir well. Add in the chicken until it is thoroughly coated with the mixture. Add a bit more yogurt if the mixture is too hot to taste. Serve cold with salad and rice. Garnish the dish with leaves of coriander.
  • Tips

    • This is a low fat recipe that uses 1 Cal cooking spray which is low fat, has no cholesterol, is less than 1 cal per spray and is gluten free. It is available in Tesco, Sainsbury's and Waitrose.

    • 2 - 3 CHICKEN BREASTS
    • 1 onion chopped
    • ½ tube tomato puree
    • 2 tbsp Good quality mango chutney
    • 1 small Jar Low fat mayo
    • 1-2 Small Cartons of Natural Yogurt
    • 1 Chilli with seeds
    • 1 tbsp Curry powder
    •  1 cal cooking spray
    •  salt and freshly ground black pepper
    •  Good Squeeze of ½ a Lemon
    •  Fresh Coriander
