Morrocan Style Chicken Risotto

Method

  • 1. Heat the oil in a heavy based pan, add the diced chicken pieces and brown.
  • 2. Add the diced pepper,dried herbs and spices. Stir to coat the chicken.
  • 3. Add the garlic and fry for about 10 minutes.
  • 4. Drain the juice from the chopped tomatoes and keep to one side. Add the tomatoes to the pan and cook for 5 minutes.
  • 5. Add the juice from the tomatoes, Worcestershire sauce and seasoning, simmer for 10 minutes.
  • 6. Add the rice and simmer for a further 10-15 minutes or until all the liquis has been absorbed and the rice is tender, stir occaisionally.
  • Ingredients

    • 500g Chicken pieces. diced
    • 150g Alborio rice (risotto rice)
    • 2 cloves Garlic crushed and finely chopped
    • 1 can Chopped tomatoes
    • I Yellow or Orange pepper. sliced
    • 1 tbsp Olive Oil
    • 2 tsp Dried Coriander
    • 2 tsp Dried thyme
    • Dash of Worcestershire sauce
    •  Salt and pepper
    • 2 tsp Paprika
