Morrocan Style Chicken Risotto
Method
1. Heat the oil in a heavy based pan, add the diced chicken pieces and brown.
2. Add the diced pepper,dried herbs and spices. Stir to coat the chicken.
3. Add the garlic and fry for about 10 minutes.
4. Drain the juice from the chopped tomatoes and keep to one side. Add the tomatoes to the pan and cook for 5 minutes.
5. Add the juice from the tomatoes, Worcestershire sauce and seasoning, simmer for 10 minutes.
6. Add the rice and simmer for a further 10-15 minutes or until all the liquis has been absorbed and the rice is tender, stir occaisionally.
Ingredients
- 500g Chicken pieces. diced
- 150g Alborio rice (risotto rice)
- 2 cloves Garlic crushed and finely chopped
- 1 can Chopped tomatoes
- I Yellow or Orange pepper. sliced
- 1 tbsp Olive Oil
- 2 tsp Dried Coriander
- 2 tsp Dried thyme
- Dash of Worcestershire sauce
- Salt and pepper
- 2 tsp Paprika
