Method
1.Place flour, sugar, spice and coconut in a mixing bowl.
2.Mash the banana on a plate with a fork until mushy.
3.Make a well in the centre of the flour mixture.
4.Mix the banana and the milk together and pour into the flour mixture. Mix well.
5.Pour the mixture into a loaf tin.
6.Bake for 20-25mins on Gas 4 / 180°C until firm to touch and golden brown.

- 100g self raising flour
- 100ml milk
- 40g sugar
- 10g Dessicated Coconut
- 1 small banana
- ½ tsp mixed spice
