Cumin Fragrant Basmati Rice

  • Soak the rice in warm water and begin by moving the rice around the bowl in the water very gently. In this process you are beginning to loosen the starch in the grains and bathing the chalky white substance from it. Drain the water very carefully and repeat the process continuously until the water is completely clear. This may take several changes of water.

  • Melt the butter in a deep pan or heat the oil, add the cloves, cinnamon stick, cardamoms and cumin seeds and sizzle for 30 seconds.

  • Now add the rice and fresh warm water, add the salt and stir. Bring to the boil and then turn down to a very low heat. Place the lid on the pan and shut it tightly and cook for 10 minutes.
  • After 10 minutes, check whether all the water has been absorbed and the rice have plumped up and is cooked through. Sprinkle some hot water if necessary. Serve with your other main course dishes

    • 400g Fine basmati rice
    • 3 cloves
    • 2 tsp cumin seeds
    • 1 cinnamon stick
    • 4 green cardamoms
    • 25g butter (or ½ tbsp of oil )
    • 2 tsp salt
    • 800ml warm water
