Basic Mediterranean Side Salad

Method

  • Dice the peppers and tomatoes and cut the onion, the leek and the celery leaves in very fine stripes. Then put all ingredients in a salad bowl.

  • Prepare the salad dressing:

  • Put all ingredients for the dressing in a blender and mix until all ingredients are well emulsified. Season again if desired.

  • (If you prefer a thicker dressing, you can also add 1 tbsp. of flaxseeds before blending.)

  • Then pour the dressing over the veggies and mix well. Enjoy your healthy salad!

  • If you fancy a treat you could even add some feta cheese

    • 1 red bell pepper
    • 1 yellow Bell Pepper
    • 3 large Tomatoes
    • 10 black olives in oil
    • 1 onion
    • 1 small stalk of leek
    • some celery leaves
    • SALAD DRESSING
    • 1/3 cup fresh lemon and / or lime juice
    • 1/3 cup extra virgin olive oil
    • 1 teaspoon garlic powder
    • ½ teaspoon ground oregano
    • ¼ teaspoon dried rosemary
    • ½ teaspoon ground cumin
    • dash of sea salt and cayenne pepper
