Basic Mediterranean Side Salad
Method
Dice the peppers and tomatoes and cut the onion, the leek and the celery leaves in very fine stripes. Then put all ingredients in a salad bowl.
Prepare the salad dressing:
Put all ingredients for the dressing in a blender and mix until all ingredients are well emulsified. Season again if desired.
(If you prefer a thicker dressing, you can also add 1 tbsp. of flaxseeds before blending.)
Then pour the dressing over the veggies and mix well. Enjoy your healthy salad!
If you fancy a treat you could even add some feta cheese

- 1 red bell pepper
- 1 yellow Bell Pepper
- 3 large Tomatoes
- 10 black olives in oil
- 1 onion
- 1 small stalk of leek
- some celery leaves
- SALAD DRESSING
- 1/3 cup fresh lemon and / or lime juice
- 1/3 cup extra virgin olive oil
- 1 teaspoon garlic powder
- ½ teaspoon ground oregano
- ¼ teaspoon dried rosemary
- ½ teaspoon ground cumin
- dash of sea salt and cayenne pepper
