1. Put the olive oil in a large saucepan over a medium heat.
2. Depending on how spicy you want your soup, either de-seed the chilli and slice, or leave the seeds in and slice, and then add to the oil along with the paprika and stir well.
3. Turn down the heat and add the red peppers, mange tout and prawns and heat through, making sure not to burn the prawns (or anything else!)
4. Make up a mug full of stock while the other ingredients are cooking and when ready add the stock.
5. Add the noodles and spinach leaves and simmer for 10-15 minutes until the noodles are soft.
