Spicy Rice Noodle and Prawn Soup

Method

  • 1. Put the olive oil in a large saucepan over a medium heat.

  • 2. Depending on how spicy you want your soup, either de-seed the chilli and slice, or leave the seeds in and slice, and then add to the oil along with the paprika and stir well.

  • 3. Turn down the heat and add the red peppers, mange tout and prawns and heat through, making sure not to burn the prawns (or anything else!)

  • 4. Make up a mug full of stock while the other ingredients are cooking and when ready add the stock.

  • 5. Add the noodles and spinach leaves and simmer for 10-15 minutes until the noodles are soft.

  • 6. Enjoy! yum
  • Ingredients

    • 1 bunch rice noodles
    • 1 stock cube (vegetable or chicken)
    • 1 chilli (red or green)
    • 1 handful Spinach leaves. chopped
    • 1 handful mange tout. trimmed and halved
    • 1 handful prawns (shelled)
    • 1 red pepper. deseeded and sliced
    • 1 tsp olive oil
    • 1 tsp paprika
