Easy Shortbread

Method

  • Preheat the oven to 150C/Gas 2/Fan oven 130C. Put the flour in a mixing bowl, add the butter and rub together to make fine crumbs. Stir in the sugar.

  • Work the mixture together until it forms a ball. Turn out on to a work surface and knead briefly until smooth. Roll and pat out on a very lightly floured surface til it's about 1cm thick. Use your cutter to cut shapes from the dough and carefully slide onto an UNGREASED baking tray. Prick the surface all over with a fork.

  • Bake for 30-35 minutes or until cooked. The shortbread should be very pale. While still warm, sprinkle with caster sugar. Cool before eating.
  • Tips

    • BE SURE YOU DO NOT USE A ROLLING PIN!!!

      The shortbread is much more crumbly and melts so much better in your mouth if you do not roll the mixture out. Press with your hands until it is fairly even but don't worry too much if it isn't completely level, it'll taste so much nicer!

    • 50g/2oz Golden caster sugar (or plain caster sugar if you haven't got it)
