Warming Beef Casserole

Method

  • Pre-heat the oven to 160oC
  • 1. Chop all the veggies into large chunks, keep the shallots whole. Place these in your casserole dish.
  • 2. Mix flour, salt and pepper, thyme and garlic granules in a dish.
  • 3. Add the flour to the steak, tossing to coat the steak pieces.
  • 4. In a hot frying pan with oil, add the stewing steak and lightly brown.
  • 5. Remove the stewing steak and if any bits are left in the pan, add red wine and stir briskly to remove these. It will make the wine thicker. Add this to your casserole dish.
  • 6. Boil the kettle, in a jug put your stock cubes, 1 use 3-4. Pour in the boiling water and stir. Add to your dish. Make sure it just covers your meat and veg.
  • 7. Add another dash of red wine.
  • 8. place the sundried tomatoes and pesto on top. Dot these about.
  • 9. Add 2 whole chillies to the top.
  • 10. Cover and place in the oven.
  • Cook for 3-5 hours (I know that's a long time but I just leave it to do it's thing!) Stir or check occasionally.
  • Tips

    • You can add any veggies you like, just remember how big your casserole dish is!
      I cook mine for 4-5 hours but cooking at 180oC for 3 may work.
      Serve with some nice warm crusty bread!

    Ingredients

    • 7-8 shallots.
    • 1 butternut squash
    • 2-3 Carrots
    • 2 parsnips
    • 3 medium potatoes
    •  you can add any veggies you like!
    • 500g Stewing Steak
    •  flour
    •  salt and freshly ground black pepper
    •  thyme
    •  Garlic powder/granules
    • 7-8 sundried tomatoes
    • 250ml red wine
    •  beef stock (adapt the amount of stock to the size of your pot)
    • 5-6tsp green pesto
    • 2 red chillies. whole

    This is one of my husband's favourite recipes. It was adapted from one my brother made me. I've made it even better!
