Warming Beef Casserole

Tips
- You can add any veggies you like, just remember how big your casserole dish is!
I cook mine for 4-5 hours but cooking at 180oC for 3 may work.
Serve with some nice warm crusty bread!
Ingredients
- 7-8 shallots.
- 1 butternut squash
- 2-3 Carrots
- 2 parsnips
- 3 medium potatoes
- you can add any veggies you like!
- 500g Stewing Steak
- flour
- salt and freshly ground black pepper
- thyme
- Garlic powder/granules
- 7-8 sundried tomatoes
- 250ml red wine
- beef stock (adapt the amount of stock to the size of your pot)
- 5-6tsp green pesto
- 2 red chillies. whole
