Method

  • Cook the onion and garlic with butter for 5 mins.
  • Add large glass of white wine and cook for a further 2-3 mins on high heat.
  • Reduce heat and add seafood, simmer for 5 mins.
  • Add pasta and creme fraiche and stir until hot through.

  • For the Bruschettea:

  • Half the loaf, cut down the middle. Toast it in olive oil on a griddle pan and when toasted rub a clove of garlic over it.
  • Serve it with chopped tomatoes mashed together in a bowl with basil, white wine vinegar, olive oil and seasoning.
  • Ingredients

    • Large Glass White wine
    • 1 onion. chopped
    • 2-4 garlic cloves
    • 1 handful Salmon Fillet skinned
    • 1 handful Prawns (uncooked peeled)
    • 1 handful squid
    • 1 handful mussels (shelled)
    • 1 Tub Creme Fraiche
    • Fresh tagliatelle pasta
    • 1 chiabatta loaf
    • 1 handful basil
    • 1tablespoon white wine vinegar olive oil
