1. In a mixing bowl, whisk together the eggs, oil, 1tsp of vanilla essence and brown sugar.
2. Add flour, salt, cinnamon into the egg mixture.
3. Fold in the grated carrots and chopped walnuts until thoroughly mixed.
4. Bake in the oven for 1.5 hours on gas mark 4, 180c.
5. The cake will not rise very much but set firm. To check that the centre of the cake has cooked insert a skewer. If it comes out clean then the cake is cooked.
FOR THE ICING
1. Beat together cream cheese, 2tsp of vanilla essence and butter.
2. Add the icing sugar and beat thoroughly.
3. Smooth over the cake adding additional walnuts.
