Method

  • 1. In a mixing bowl, whisk together the eggs, oil, 1tsp of vanilla essence and brown sugar.

  • 2. Add flour, salt, cinnamon into the egg mixture.

  • 3. Fold in the grated carrots and chopped walnuts until thoroughly mixed.

  • 4. Bake in the oven for 1.5 hours on gas mark 4, 180c.

  • 5. The cake will not rise very much but set firm. To check that the centre of the cake has cooked insert a skewer. If it comes out clean then the cake is cooked.

  • FOR THE ICING

  • 1. Beat together cream cheese, 2tsp of vanilla essence and butter.

  • 2. Add the icing sugar and beat thoroughly.

  • 3. Smooth over the cake adding additional walnuts.

    • 8oz/225 grams Self Raising Wholemeal Flour
    • 8oz/225grmas grated carrots
    • 300 mls Corn Oil
    • 12oz/350grams Brown sugar
    • 1tsp Salt
    • 2tsp Cinnamon
    • 8oz/225grams Chopped Walnuts
    • 8oz/225grams Full Fat Cream Cheese
    • 4oz/100grams Butter or Margarine
    • 2tsp Vanilla essence
    • 8oz/225 grams Icing Sugar
