Method

  • 1.Measure and place all the ingredients in a bowl and mix.

  • 2.bake in a greased and lined 2lb loaf tin for 50 mins at 160'c (or longer if necessary).

  • 3.While the cake is still hot in the tin dissolve the 2 tablespoons of sugar in the lemon juice and pour over the cake.

  • 4. Leave to cool in the tin.
  • Tips

    • This cake works just as well with an orange rather than a lemon.

    Ingredients

    • 4oz margarine
    • 4oz caster sugar
    • 5oz Self-raising flour
    • 2 eggs
    • tablespoon Lemon Curd
    • 1 grated lemon rind
    • TOPPING
    • 2 tablespoons granulated sugar
    •  juice of 1 lemon
