Roasted Vegetables with Feta Cheese and Balsamic

Method

  • Preheat over to F375
  • Toss vegetables with olive oil and wine, herbs, salt and pepper.
  • Roast vegetables in a heavy roasting pan until tender.
  • Turn occasionally.
  • Continue roasting until tender.
  • Drizzle with balsamic vinegar.
  • Toss with feta cheese.
  • Return to over for 5 minutes.
  • Serve
  • Ingredients

    • 1 winter suash. peeled and seeded; cut into 1" pieces
    • 4 large onions. cut into 1" pieces
    • 6 carrots. peeled and chopped into 1" pieces
    •  fresh herbs
    • ½ cup White wine
    • ½ cup olive oil
    • ½ teaspoon salt and pepper each
    • ½ cup Balsamic Vinegar
    • 8 ounces feta cheese. cut into small pieces
