Roasted Vegetables with Feta Cheese and Balsamic
Method
Preheat over to F375
Toss vegetables with olive oil and wine, herbs, salt and pepper.
Roast vegetables in a heavy roasting pan until tender.
Turn occasionally.
Continue roasting until tender.
Drizzle with balsamic vinegar.
Toss with feta cheese.
Return to over for 5 minutes.

Ingredients
- 1 winter suash. peeled and seeded; cut into 1" pieces
- 4 large onions. cut into 1" pieces
- 6 carrots. peeled and chopped into 1" pieces
- fresh herbs
- ½ cup White wine
- ½ cup olive oil
- ½ teaspoon salt and pepper each
- ½ cup Balsamic Vinegar
- 8 ounces feta cheese. cut into small pieces
