White Chocolate Mousse

Ingredients

  • 250g White chocolate
  • 4 drops Vanilla essence
  • 4 despns Sugar
  • 4 tablsp Milk
  • 4 large Eggs
  • 250ml Cream

Method

1. Break chocolate and melt with milk in microwave.

2. Stir in vanilla.

3. Whisk yolks with sugar until pale and thick.

4. Add 3 dessertspoons of chocolate mixture to egg mixture and stir well.

5. Add all chocolate mixture to egg mixture and beat for 1 – 2 minutes until blended.

6. Wisk egg whites until stiff peaks form and fold into chocolate mixture.

7. Lightly whisk cream until soft peaks form and fold into mousse.

8. Pour mixture into mould and chill in freezer until set.

9.Just before serving, streak with melted chocolate or crushed Maltesers.
