BANANA CAKE (Vegan)

Method

  • 1. Mix together the OIL, AGAVE SYRUP and SUGAR in large bowl.
  • 2. Mash BANANAS in separate bowl.
  • 3. Chop WALNUTS.
  • 4. Measure SOYA MILK, add VINEGAR and let curdle.
  • 5. Sieve the FLOUR, BAKING POWDER, BICARBONATE OF SODA, CINNAMON and SALT into oil and sugar mix.
  • 6. Mix together adding the MILK, VANILLA ESSENCE, MASHED BANANAS and stir in the chopped WALNUTS.
  • 7. Grease and line the bases of 2 LOAF TINS with greaseproof paper.
  • 8. Divide the mixture evenly between the tins.

  • BAKING
  • 9. Bake in slow oven 155 degrees C / 310 degrees F
  • for 60 minutes (check that cakes are done by testing with a thin knife, pierce cake to its depth and if the knife comes away cleanly it's done, if sticky, bake for another 10 minutes).
  • 10. Leave to cool in tin for 10 minutes. Use a knife to check that cake has separated from sides of tin then turn out on to cooling tray.
  • 11. Cake improves being kept for a day after baking.

  • Tips

    • * SLICE banana instead of mashing.
      * OMIT walnuts to have a plain banana cake. Even two bananas works well!
      * Freezes well.

    Ingredients

    • 1 CUP vegetable oil
    • 1 CUP Light Muscovado sugar + ½ Cup of AGAVE SYRUP (or 2 Cups of Sugar)
    • 1 CUP soya milk
    • ½ TSP apple cider vinegar
    • ½ TSP Vanilla essence
    • 3 CUPS Organic Fine Wholemeal (or Spelt) Flour
    • 2 TSP Baking Powder
    • ½ TSP Bicarbonate of Soda
    • 2 TSP Cinnamon
    • 1 level TSP Sea Salt
    • 1 CUP Chopped Walnuts (optional)
    • 2 CUPS Ripe Mashed Bananas

    A GOODIE favourite with everyone and its VEGAN! Improved recipe! Use to have 3 cups of sugar WHEW! This reduced sugar version is healthier and still much enjoyed!
