BANANA CAKE (Vegan)

- * SLICE banana instead of mashing.
* OMIT walnuts to have a plain banana cake. Even two bananas works well!
* Freezes well.
Ingredients
- 1 CUP vegetable oil
- 1 CUP Light Muscovado sugar + ½ Cup of AGAVE SYRUP (or 2 Cups of Sugar)
- 1 CUP soya milk
- ½ TSP apple cider vinegar
- ½ TSP Vanilla essence
- 3 CUPS Organic Fine Wholemeal (or Spelt) Flour
- 2 TSP Baking Powder
- ½ TSP Bicarbonate of Soda
- 2 TSP Cinnamon
- 1 level TSP Sea Salt
- 1 CUP Chopped Walnuts (optional)
- 2 CUPS Ripe Mashed Bananas
