Dice all vegetables and fry in a large saucepan with a drizzle of olive oil and garlic on med/high heat for 5-10 mins. Add chopped tomatoes and carton of passatta. Heat till simmering, then add herbs, turn to low heat and cover. Leave to cook through for around 20 mins, stirring occasionally. Remove bay leaves once vegetables are tender and pour mixture into a blender and blend to desired consistency. Stir this into cooked pasta, add a little grated cheese if desired.
