Method

  • Chop the beetroot and the drained herring fillets and combine with the onion in a bowl.
  • Add the mayonnaise and season.
  • Leave in fridge 1 hour or even overnight for the flavours to combine.
  • Tips

    • Serve with dark rye bread or baby new potatoes.
      Rich in Omega 3.

    Ingredients

    • 2  fillets of pickled herring or 1 tub of rollmops
    • 1 med onion finely chopped
    • 3 beetroots (pickled. idealy the vaccum packs)
    • 1tbsp low fat mayonnaise
    •  salt and pepper to taste

    Reminds me of my summer holidays in Sweden, when I was little.
