Method

  • 1. Melt MARGARINE and MALT.
  • 2. Sieve FLOUR, SOYA FLOUR, BAKING POWDER, SALT and SUGAR into a large bowl.
  • 3. Measure SOYA MILK and add VINEGAR to slightly curdle milk.
  • 4. Add the melted mixture and soya milk to the sieved FLOUR. Mix with a wooden spoon then use fingers to bind until dough is firm. Only add more soya milk if necessary (add more flour if mixture too wet).
  • 5. Grease baking trays and sprinkle with a fine coating of plain flour.
  • 6. Turn dough out on to a lightly floured surface and knead into a thick oblong shape. Use a rolling pin to roll to a suitable thickness (approx. 2cm) and cut into 12 - 14 scones.
  • 7. Arrange on baking tray and brush the tops with SOYA MILK.
  • BAKING
  • 8. Bake for 15 minutes at 210 degrees C / 420 degrees F until lightly brown.
  • 9. Remove from tray and leave to cool on rack.
  • Tips

    • Use MOLASSES instead of MALT to make TREACLE SCONES. Try a mix of 1 TABLESPOON MALT and 1 TABLESPOON MOLASSES. Use SOYA YOGURT instead of SOYA MILK and omit the vinegar. (Biona Organic Sunflower Vegetable Margarine is the best found so far for Vegan baking). FREEZE WELL.

    • 7 OZ Organic Fine Wholemeal (or Spelt) Flour
    • 7 OZ Organic White Plain Flour
    • 2 OZ Organic Soya flour
    • 5 LEVEL TSP Baking Powder
    • 1 LEVEL TSP Fine Sea Salt
    • 2 TABLESPOON Light Muscovado Sugar
    • 4 OZ Vegetable Margarine
    • 1 TABLESPOON Malt
    • ½ TSP Apple Cider Vinegar
    • 4 FLUID OZ Soya Milk
