Lorna's Red Spiced Beef

The Basics

Ingredients

  • 625g rump steak or sirloin
  • 2 tbsp paprika
  • 2-3tsp mild chilli powder
  • ½ tsp salt
  • 6 celery stalks
  • 6 tbsp stock/water
  • 2 tbsp tomato puree
  • 2 tbsp clear honey
  • 3 tbsp white wine vinegar
  • 1 tbsp Worcestershire sauce
  • 2 tbsp sunflower oil
  • 4 spring onions (thinly sliced diagonally)
  • 4 tomatoes (peeled deseeded and sliced)
  • 1-2 garlic cloves (crushed)
  •  Chinese noodles to serve

Method

1.Cut the steak into narrow strips 1cm thick and place in a bowl.

2.Combine the paprika, chilli powder and salt and add to the beef, mixing until the strips are evenly coated with the spices. Cover and leave to marinate for at least 30 mins.

3.Cut the celery into 5cm lengths and slice into 5mm strips.

4.Combine the stock, tomato puree, honey, vinegar and Worcestershire sauce.

5.Heat the oil in the wok until very hot. Add the spring onions, celery, tomatoes and garlic and stir-fry for about 1 minute until the vegetables start to soften.

6.Add the steak strips and stir-fry over a high heat for 3-4 minutes until the meat is sealed.

7.Add the sauce to the wok and continue to stir-fry until thoroughly coated and sizzling.

8.Serve with noodles and garnish with celery leaves, if using.
