Warm small mixing bowl by stiring some hot water in it. Add the warm water, yeast and a pinch of sugar. Stir and leave to stand until it begins to foam, about 5 - 10 mins.
Using a wooden spoon stir into about a 3rd of the flour. Mix in another 3rd until the dough forms a mass and begins to pull away from the sides.
Sprinkle some of the remaining flour onto a side and knead the dough for 8 - 10 mins. The dough should now be elastic and smooth, form it into a ball.
Lightly oil a large mixing bowl and place the dough inside, cover with a damp tea towel and leave in a warm place for 40 - 50 mins.
The dough is ready if when it is poked with 2 fingers the indentations remain.
Punch the dough firmly and knead for a further 1-2 mins.
Roll it out into portion size and put whatever toppings you wish.
