" Aduki beans in a spicy/garlicy tomato sauce with rice or whatever you desire. "
1 standard can will feed three people.
1 can aduki beans rinsed
1 stick celery
1or 2 large green peppers
1 medium onion
3 or 4 tomatoes
2 cloves garlic
Tomato puree or jar of arrabiata or similar sauce
Sweet chilli sauce
Fresh coriander
Salt and pepper
Cut the celery, peppers, onion and tomoates into small pieces….celery = 2mm slices…peppers ¾ cm dice…onion ¾ cm dice…tomatoes 1cm dice…
Chop the garlic
Chop (shred) the coriander (approx equivalent 20-30 leaves ish)
Gently fry off the onions followed by peppers and celery, then the garlic to prevent burning it and finally the tomatoes….add salt and pepper as you go.
Either add a little water and thicken with tomato puree or preferably add jar of arrabiata sauce. Stir till starts to simmer then add sweet chilli sauce and if necessary add a little sugar to rid any bitterness caused by the fresh tomatoes. Then add the coriander and stir. Finally add the beans and continue stirring gently till thoroughly heated.
Jolly nice with rice…
Basmati rice
Cardomom pods x6
Cinnamon stick x 1 small one
Salt and pepper
Wash the rice 4or 5 times then cover with approx 1 and ½ times cold water…add salt…cardamom and cinnamon stick.
Place on fairly high heat and allow to boil with lid on.
Boil the kettle so as when rice is ready it can be further washed to prevent stodgyness…
When cooked and water all gone in pan (make sure and stir rapidly to prevent sticking to pan when water is nearly all evaporated)…tip into colander/sieve and swirl out remaining in pan with boiled water, pour boiling water over the cooked rice ….drain and return to the pan…you can if desired fork through a teaspoon or two of olive oil.
Eating plenty does not induce a heavy stomach and is low GI apparently!!!
