Greek Style Salad

Method

  • 1. Cut the ends off the cucumber and then cut down the middle. Lay the two halves on their flat sides and then chop into fine slices.

  • 2. Cut the tomatoes into quaters and then carefully cut out the central core and throw it away. Put the tomato quaters and cucumber in a large salad bowl.

  • 3. Cut the ends off the onion and cut into quaters. Then cut into slices. Open the packet of cheese and pour any liquid away.

  • 4. Cut the feta cheese into cubes, then add it to the bowl. Also add the slices of onion and most of the olives.

  • 5. Peel and crush the garlic. Put the olive oil, vinegar, garlic, oregano and sugar into a jam jar with a lid. Add a pinch of salt and pepper, then screw the lid on tightly. Shake the jar well to mix the dressing, then pour it over the top of the salad, mix it with your hands. Then scatter the rest of the olives over the top.
  • Tips

    • Olives can be too salty for a salad. To make them less salty, soak them in cold water for an hour, then drain them.

    • ½ cucumber
    • 450g ripe tomatoes
    • 1 Red Onion
    • 200g packet of feta cheese
    • 75g Black or green olives. (drained and stoned)
    • 1 garlic clove
    • 4 tbsp olive oil
    • 1 tbsp white wine vinegar
    • ½ tsp fresh oregano
    • pinch caster sugar
    •  salt and freshly ground black pepper
    •  jam jar with lid
