Coconut Pancakes

Every weekend we have big family breakfasts and these pancakes are top of the list.

Method

Mix sifted flour, baking powder, sugar and dessicated coconut together in a bowl. Mix egg yolks, coconut cream and milk in a jug. Add the cooled melted butter to the cream mixture then mix into the dry ingredients until smooth. Add a pinch of salt to the egg whites then whick them to soft peaks. Add to the pancake mix and stir thoroughly until combined.

Heat a hotplate or frying pan, add a serving spoon of pancake mix and leave until you see bubbles forming on the surface. Flip pancake over and cook for another 30-40 seconds. Repeat until you have used up all the mix.

Serve with toppings of your choice

Eggs Separated 4
Baking Powder 1 Tspn
Plain Flour 1 Cup
