    Ingredients

    • 1 cup Plain Flour
    • 1 tspn Baking Powder
    • 4 Eggs separated
    • 5floz coconut cream
    • 3fl oz Double cream
    • Pinch Salt
    • 1 oz dessicated coconut
    • 1 tblspn caster sugar
    • 2 tblspns unsalted butter melted

    Method

    • Mix sifted flour, baking powder, sugar and dessicated coconut together in a bowl. Mix egg yolks, coconut cream and milk in a jug. Add the cooled melted butter to the cream mixture then mix into the dry ingredients until smooth. Add a pinch of salt to the egg whites then whick them to soft peaks. Add to the pancake mix and stir thoroughly until combined.

      Heat a hotplate or frying pan, add a serving spoon of pancake mix and leave until you see bubbles forming on the surface. Flip pancake over and cook for another 30-40 seconds. Repeat until you have used up all the mix.

      Serve with toppings of your choice
