Curried Chickpeas

Method

  • In a large pan, sweat the Onion and Garlic in the Olive Oil until translucent.
  • Add Curry Powder (add more curry powder according to taste), Tahini Paste and Sesame Seeds, increase the heat slightly and stir to combine the ingredients. Cook for five minutes.
  • Add the Chick Peas and Stock, bring to the boil and then simmer, stirring occasionally. Add more water as and when required until the Chick Peas have began to soften slightly.
  • When the Chick Peas are beginning to soften allow the water to reduce until almost evaporated. Now add the Red Pepper, Parsley, Lemon Juice and the Soy Sauce. Stir, and return to a simmer for a further 5 minutes. Serve with rice or couscous.
  • Tips

    • Can be served hot or cold. It makes a great main dish but also a tasty side dish for parties and BBQ's. Great served with Rice, but I also like i with Couscous.
      For that luxury touch I make it with Thai Curry Paste and add a swirl of Coconut Cream at serving.

    • 2 Cans Chick peas
    • 2 onion chopped
    • 2 tbsp Sesame Seeds
    • 1½ tbsp olive oil
    • 1 tbsp Tamari (Light Soy Sauce)
    • 1 red pepper. chopped
    • 1 tbsp Curry powder
    • 3 tbsp Lemon Juice (fresh)
    • ¼ pint Vegtable Stock
    • 2 cloves garlic
    • 3 tbsp chopped fresh parsley
    • 1 tsp tahini paste (optional)
