Roll out pastry and line dish. Prick base and bake in oven for 15 minutes 180C or 325F. Put the zest, juice, eggs and sugar in a food processor for approx 2 minutes. Add cream anbd blend for 30 seconds. Pour into pastry case and cook for 45 - 55 minutes until set.

I love this cake. it is ideal for people like myself who do not enjoy gooey confectionery. Very moorish!
