Method
Preheat your oven to 180C and lightly grease a 7" round, deep cake tin.
Beat all the cake ingredients in a bowl for 2 mins until smooth and well mixed. Leave the topping ingredients aside for a moment.
Add the cake ingredients to the tin and bake in the oven for 35-40 minutes. You can tell it's cooked when a skewer or sharp knife comes out clean.
While the cake is baking, make the topping by blending the sugar and lemon juice together.
When the cake is done, remove from the oven and while still in the tin, paste over the topping while the cake is still hot.
Once cool, remove the cake from the tin and enjoy!

- 100g / 4oz butter or margarine
- 175g / 6oz caster sugar
- 175g / 6oz self-raising flour
- 1tsp baking powder
- 2x eggs
- 4 tbsp milk
- finely grated zest of 1 lemon
- TOPPING
- 100g / 4oz caster or granulated sugar
- juice of 1 lemon
