Lemon Drizzle Cake

Method

  • Preheat your oven to 180C and lightly grease a 7" round, deep cake tin.

  • Beat all the cake ingredients in a bowl for 2 mins until smooth and well mixed. Leave the topping ingredients aside for a moment.

  • Add the cake ingredients to the tin and bake in the oven for 35-40 minutes. You can tell it's cooked when a skewer or sharp knife comes out clean.

  • While the cake is baking, make the topping by blending the sugar and lemon juice together.

  • When the cake is done, remove from the oven and while still in the tin, paste over the topping while the cake is still hot.

  • Once cool, remove the cake from the tin and enjoy!

    • 100g / 4oz butter or margarine
    • 175g / 6oz caster sugar
    • 175g / 6oz self-raising flour
    • 1tsp baking powder
    • 2x eggs
    • 4 tbsp milk
    •  finely grated zest of 1 lemon
    • TOPPING
    • 100g / 4oz caster or granulated sugar
    •  juice of 1 lemon
