Method

  • Chill a champagne flute and add the purée.

  • Half fill the flute with chilled prosecco.

  • Stir well, allowing the froth to die down.

  • Top up with prosecco and serve.
  • Tips

    • Don't skimp with normal peach juice here. Even freshly squeezed won't be as good as a proper white peach purée. Funkin peach purée is one of the best (www.funkin.co.uk, available in Waitrose).

      The money you spend on the peach purée is easily recovered by using prosecco rather than champagne. Prosecco has a subtler taste meaning you don't need as much peach, which in turn means you get an elegant cocktail rather than a peach & champagne sludge.
